I recently stumbled across this food blog and immediately wanted to try this recipe. I cook mostly vegetarian and am so fortunate that Christian will go along with it. Don’t get me wrong, he asked for a gift card to The Meat House for his birthday, but he goes along with my meal plans as long as he’s not the one cooking.
A one-pot recipe, I was all in! So easy and fresh, this is definitely an inexpensive, healthy and delicious weeknight dinner. I’ll be making this again. If you give it a try let me know what you think!

This looks really good! I have never cooked with quinoa before. It kind of scares me. But I may have to be brave and try this!

I loved this dish. I made a similar version last night but added eggplant, whole green onions, heirloom tomatoes and used bok choy instead of fennel. Wish I had fresh cali veggies to use in mine though. Thanks for sharing K. Hope you are doing well!
